Is Octopus The New Calamari? The last five people I dined with ordered Octopus. I’m thinking something is up with this trend so I invited Chef Keith Suarino the Chef De Cuisine at The Castle Hotel & Spa In Tarrytown, NY to discuss and send along his own Octopus dish featured below. Octopus has been spotted on many food trend list predictions for this year, including Pinterest’s top 2017 emerging trends. Part of the cephalopod family that also includes squid, octopus has meaty, tender flesh with great flavor and a welcomed natural chewiness. It’s an increasingly intriguing menu item for customers it seems. Did you know there are over 300 types of this oceanic cephalopod? Did you know Octopus is also a very nutritious food. A high source of 12 different vitamins and minerals! This means that in each 3 oz serving of octopus you are consuming more than 10% daily value (DV) of 12 essential nutrients that you need every day. It is a lean protein source, low in fat and contains as much protein as a similar 3 oz serving of chicken. Tune in 10:20am eastern as Chef Keith Suarino helps wrap out tentacles around this topic.

The Great Jack O’Lantern Blaze, one of the country’s biggest Halloween themed events, is back! The Blaze drew more than 160,000 visitors last year, and features more than 7,000 illuminated, individually hand-carved jack o’ lanterns. Elaborate single-pumpkin carvings and huge multi-jack o’lantern constructions are professionally lit throughout the landscape of Van Cortlandt Manor off Route 9 in Croton-on-Hudson, NY. Rob Schweitzer, Vice President of Historic Hudson Valley joins me at 10:40am today to share that the Blaze will run for 45 nights this season to give more visitors a chance to see one of the biggest Halloween Happenings in the U.S.!

The Great Jack O’Lantern Blaze kicks off on Sept. 29 and runs through Nov. 25. Prior to opening, 14 nights are already sold out, including the entirety of the first weekend.

(Some lucky show follower who ‘likes’ this post will be chosen at random for some tickets to the Blaze!)

BTW …Favorite installations, such as the Undersea Aquarium and Jurassic Park, are joined this year by new creations such as the Statue of Liberty, a fully-functioning, 20-foot diameter Pumpkin Carousel, the Pumpkin Possum Posse, and a pint-sized herd of dinosaurs ? all made of jack o’lanterns!

Due to unprecedented popular demand, Historic Hudson Valley is adding five new dates to The Great Jack O’Lantern Blaze®: Oct. 10-11 and Nov. 1, 8, 16.
